Uric acid is formed when proteins in the food we eat, called purines, are broken down. Avoiding purine-rich foods can help manage the symptoms of gout.
However, as purines are a natural part of many healthy foods, it is extremely difficult to follow a diet very low in purines.
Individuals with gout should also avoid low-carbohydrate diets as low intake of carbohydrate will lead to the release of substances called ketones into the bloodstream. This is because means the body is unable to properly burn fat stores.
This rise in ketones can result in a condition called ketosis that can increase the level of uric acid in the blood. Therefore you should follow a diet that is low in saturated fat, with increased protein. The replacement of refined carbohydrates such as sugar, white bread, potatoes with complex carbohydrates such as vegetables and whole grains can help reduces the serum uric acid.
It is most important to avoid many foods that are high in purines, to ensure that the levels of uric acid in the blood do not get too high. These include anchovies, beef kidneys, dried beans and peas, game meats, herring, liver, mackerel, sardines, scallops, sweetbreads.
However certain purine-rich foods will not increase the risk of gout, or aggravate symptoms. These include asparagus, beans, some other plant-based foods, and mushrooms. In short decreasing the consumption of seafood and red meat and consuming low-fat dairy products decreases the risk of gout. Purine-rich vegetables, whole grains, nuts and legumes, and less sugary fruits, coffee, and vitamin C supplements decrease the risk of gout, whereas red meat, fructose-containing beverages, and alcohol increase the risk. Eating more cherries and drinking cherry extract may be a safe way to supplement your gout treatment.
